Spicy Italian sausage
2 1/2 gluten flour
½ c nutritional yeast
¼ c chickpea flour
2 tbspn mustard pwdr
2 t sage
1-2 tbspn fennel seed
1-2 t coarsely ground bl pepper
2 t paprika
2 t chili flake
1 t smoked paprika
1 t Italian season
11/2 t salt
pinch cloves or 1/8 t allspice
2 tbspn hing
(wet ingredients)
2 tbspn olive oil
2 ½ tbspn soy sauce
2 ½ c water
Combine dry ingredients. Combine wet. Combine wet with dry. Adjust water and gluten flour accordingly. Scoop 1/3 cup of mixture, shape into link and wrap in foil square. Twist ends. Steam for 30 minutes, remove from foil, refrigerate.
