I just wanted to make sure you knew the croissant recipe you posted contains eggs… I was disappointed because I used to loveeee croissants and have been really interested in finding a good eggless recipe that still makes the croissants fluffy on the inside and flakey and crispy on the outside. It is an egg wash, which I omit. The croissants get light and flaky from the process of laminating the dough with butter (even coconut oil works). Eggs only work to get the outside of the croissant a golden color. Even without egg-wash, the croissants turn out quite beautifully.

dd, how did you make your rose petal jam?
last year i also made the same, using rose petals from several varieties of old world roses, each batch came out with a different hue and perfume.
one favored june deity breakfast offering was rose petal-pistachio scones, rose petal jam cream cheese or butter, and a dab of rose petal jelly on top. that served with a trio of mountain berries–purple saskatoons, baby wild strawberries and golden raspberries. simple, but exquisite as well.
