    I just wanted to make sure you knew the croissant recipe you posted contains eggs… I was disappointed because I used to loveeee croissants and have been really interested in finding a good eggless recipe that still makes the croissants fluffy on the inside and flakey and crispy on the outside. Let me know if you find anything! Thanks!

      It is an egg wash, which I omit. The croissants get light and flaky from the process of laminating the dough with butter (even coconut oil works). Eggs only work to get the outside of the croissant a golden color. Even without egg-wash, the croissants turn out quite beautifully.

    dd, how did you make your rose petal jam?
    last year i also made the same, using rose petals from several varieties of old world roses, each batch came out with a different hue and perfume.

    one favored june deity breakfast offering was rose petal-pistachio scones, rose petal jam cream cheese or butter, and a dab of rose petal jelly on top. that served with a trio of mountain berries–purple saskatoons, baby wild strawberries and golden raspberries. simple, but exquisite as well.
